Ingredients: Salad

250 g buffalo mozzarella (or non-dairy substitute)
0.5 mango
1 small head of radicchio lettuce (about 2 cups, chopped)
1 cup rocket
60 g cherry tomatoes
2 tablespoons chopped walnuts
2 tablespoons pomegranate arils

Ingredients: Dressing

1 tablespoon tahini
1 tablespoon lemon juice
3 tablespoons olive oil
2 tablespoons full-fat yoghurt (or non-dairy substitute)

Directions

Directions: Salad

  • Drain the buffalo mozzarella and pat dry.
  • Peel and cube the mango.
  • Wash the radicchio lettuce and cut into strips.
  • Cut each tomato in half.
  • Tear buffalo mozzarella into pieces, layering it with the mango, radicchio, rocket, cherry tomatoes, chopped walnuts and pomegranate arils together in a glass jar. Top with dressing (recipe follows) when ready to serve and shake gently.

Directions: Dressing

  • In a separate jar, mix together all ingredients. Close well and shake to mix.
